6 o'clock Lamb

I haven't been cooking too regularly but I didn't post an amazing recipe which I cooked when my sister and brother-in-law were here two weekends ago. I think I was just taking in the moment and too busy prepping things and making sure nothing burns, although I did burn myself a little. That recipe I will just have to put on here anyway, since I feel that it was a keeper. It was a salmon dish, although the original was with trout, but I guess now you know that I like to switch some ingredients around. Ha

This latest recipe was from my Jerusalem cookbook. It usually doesn't take me too long in order to find a recipe that I would like to concoct. So this time I made lamb, with eggs, and other spices and such that made the dish worth what it is. I didn't however, and perhaps even unfortunately use tahini or harissa paste, or sumac. When you're not living in an Arab country, somethings may be a little harder to find. But I still found this recipe to be really good and interesting, with all the flavors in unison. My family who tried it said the same:)


With this one, there were a good number of steps that I had to pay attention to. But luckily nothing was too crazy or should I say even very difficult. I seriously started making this dish at 6 pm and had it ready a little after 7:30 pm. Sundays, (which was the day I cooked it) can always be a bit hard. I love Sundays, and I love going to the library on Sundays up until the late afternoon. My Mom and I kept telling ourselves that we would leave the library to go to store at a descent time, yet we kept pushing it back at least 3 times. We were thoroughly engrossed in our reading and work, and the quiet, glowing ambiance of the library was another factor. After finding all that I would need at the store, except for those three ingredients I mentioned earlier, I was ready to start cooking, and cooking fast, for my Dad highly dislikes eating 'late' on a Sunday evening, but fortunately everything seemed to unravel nicely and there were no big hiccups in the process.

My sister isn't too fond of lamb, but I guess I surprised her with this one because she liked it better than before. I personally like the smell of ground lamb cooking, and with the ingredients in this recipe, it worked well with the lamb, and the eggs, tomatoes and everything else. I look forward to the other recipes I will try in this gem!

Holy Mackerel

I was so excited to cook something out of my new and inspiring cookbook. Flipping through the pages and learning about new dishes is always fun. This time, I decided to cook a recipe with fish in it. I'm not a huge seafood lover, then again I haven't tried most seafood, so maybe it's too early to tell. However, I do want to try more seafood that I haven't already checked off my list of scary looking, funny smelling and popular treats, some call that can easily be popped in your mouth. Hmm, sounds enticing.



This recipe in particular was something different and required mackerel. I do not know a whole lot about fish, or mackerel but something new is always exciting to try, right?:) I went on board to go to the grocery store with my Mom...(this is a goal of mine, to become more familiar with the grocery store) And if you're going to cook or bake, you kinda need to know where things are.


When I saw this tree a few weeks ago, I was like holy mackerel! Love this color. Now it's all bare:/

We had to ask the 'fish guy' who works in the seafood section if they carry mackerel. The first thing he said was holy mackerel, and the next thing he said was that no, they didn't carry it. He asked what I was making, and I told him a Jerusalem dish, and I could tell that his mouth began to water, yet I couldn't tell him the name of the dish- but now I can tell you! Pan fried mackerel with golden beet and orange salsa. Instead of getting mackerel and probably searching for a while at an Asian or specialty market, we went for sardines. They also didn't carry golden beets, only the red kind, we went for the red.

I was unfamiliar with beets until now. They do tend to stain your hands and anything else they touch a little, but I thin it would be cool to use them for dying a t-shirt or something. In the end, the sardines worked out well, and were pretty oily, similar to the consistency of mackerel. I really, really liked making this dish and enjoyed even more eating it. There was so much flavor, and the salty, tender sardines with the sweet and sour tang of the fruit in the salsa was a delight.


Maybe now after cooking this dish, I will become more eager and perhaps more ambitious to cook up more fish /seafood recipes. Note, my big brother got me this cookbook for Christmas, and he's vegetarian so I think it's a win win and now I finally have a vegetarian dish under my belt:)

Reflecting Upon A Time

This time of year is always very busy and even sometimes crazy. There is the hustle and bustle of shoppers, family in town and personally for me a large desire to reflect on this year and to prepare my mind for the next! With only a few days left in 2016, there seems to still be so much that I would like to do. My list of goals may not have been completed fully but I accept that since that's the beauty of creating challenges and goals for myself; it doesn't have to be perfect.

This year of 2016 has had so many emotions and trials that in the end it has really taught me a lot about life, myself and what really matters. This year there were many moments of solitude, soul searching, and learning about myself on a whole new level that wasn't familiar to me before. I think that's something that is normal as you go through your 20's, most likely one of if not the hardest time in your life. There is so much time for self- discovery during these years that is so very needed, yet painful and even lonely at times.

While I was in Rio this Summer, there were many hard moments that I experienced, internally. There were also really nice and enjoyable times, but a lot of them were also more internal. My last day in Rio, I had the hotel room to myself since my roommate had an earlier flight. I just enjoyed soaking everything in, and looking out the window and taking some alone time to myself before my long flights ahead.





If I could pick a month that stands out to me this year, it would most likely be August. There was so much variety and new experiences that collided with one another, challenging, exciting, inspiring, and fear paved the way. The month started with going to a coffee shop with my dearest and inspiring sister, and getting more into my Arabic studies. Learning more about this interesting and exotic language keeps motivating and challenging me to advance my knowledge in this Semitic language.



Close to the middle of August, I was lucky enough and able to go to San Salvador, El Salvador for my sweet sister and brother in law's wedding. I will never forget that day and I don't even think the details will fade my memory. The experience and feeling of being there was something incredible and easy to recreate in memory and feeling but hard to explain in words. The week after the wedding followed a spark in my mind, a necessity to create a blog, something to look forward to and write and share about my interest and passions. This also happened to be one of my hardest weeks of the year- full of anxiety and fear that led my mind and actions. The end of August only got better, and writing on Plum Tree began to become a regular thing, and the last rays of Summer were in due season as Autumn would soon be taking its course.

To be honest, each season this year was very hard and had its moments of pain, but I found that this pain only brought me to know and understand myself better and with this understanding came more appreciation and awareness of  the goodness and beauty around me. I don't have to even look very far to find a glimmer of it. The pain and the emotion throughout these four seasons helped with this beauty, and realizing that all emotion is beautiful.

I think there is still so much more to say about this year, and how 'new' and 'unpredictable' were the words that highlighted this year. But I think I will save it for another post, and leave my reflections and thoughts for another time:) Cheers to this wonderful, long yet short, interesting and surprising year of 2016!! Looking forward to all that's ahead...

Persian Twist

I've been meaning to cook a Persian dish, and for a while had no luck in finding a cookbook from this region. With a little more scoping, something came up, and I found the same recipe that I had had at a Persian restaurant just 3 weeks ago, with my sister and brother in law. I was excited to make this recipe, yet I've learned a few things about the cooking process. Always read the whole recipe before starting, and once I did this I realized that I had the wrong kind of lamb. Lamb shoulder instead of ground lamb. Oh well. So the recipe made a turn of its own, and I created a kind of lamb chops with rice. It wasn't what I wanted initially but it turned out alright in the end.

Hopefully in the future, I can cook more Persian meals, and maybe try this one again, with the right ingredients;) Now, I'll need to figure out what I'll be baking this holiday season! Till next time...

October Has Come

October is here, finally. I think October is one of my favorite months of the year. It's the true Autumn month and makes me feel warm inside. It's also the time where I can dig out my scarves, boots and nice warm sweaters. October is also considered Mary's month, which is another reason for having a strong connection with the 10th month of the year. I wanted to write about some of my favorite Mary Apparations, which are the appearances of Mary through out the world. I think it would also be good if I could learn some more about each of them as well. :)

Our Lady of China

I find this devotion and apparation of Mary to be very personal and special to me. China has a long history, and part of it being related to the Catholic Church and the politics involved with that. Also, something I should learn more about. Learning Chinese has been part of me for a while now, and I feel that I have a strong connection with it, so Our Lady of China is one of my favorites.












Our Lady of Kibeho



I have heard a good amount about Our Lady of Kibeho, and there is even a book about it that I have started reading a while back and still want to continue reading! From what I know, it's a pretty amazing story and her appearance in Rwanda is not forgotten.












Our Lady of Vailankanni/Our Lady of Good Health

I wanted to research if there ever was an apparation of Mary in India. I know that India does have Catholicism, yet hadn't heard about an appearance of Mary. I would like to learn more about this devotion and appearance of Mary, I only read a little. But since I am pursuing the Hindi language, I feel that it would also be important as well as special to know about.










Our Lady of Lourdes
I have not had the privedlge yet of seeing this amazing holy site, but learning the story as a young girl has helped me have a stronger devotion to this apparation, and has become one of my favorites as well.

Our Lady of Guadalupe


Our Lady of Guadalupe is a very famous apparation of Mary, and I think it's one of my favorites. I see it everywhere, since it's quite popular. I really love the story as well. I have an image in my room, and it was the church where my sister and her husband got married in El Salvador. So personally, it's one of the most special of all.:)




Our Lady of Fatima

I also grew up with learning about the story behind this apparation, and would also call it a favorite of mine. Our Lady of Fatima had such a powerful impact in our world, and I only want to grow deeper in this beautiful and strong appearance of Mary.

Our Lady of Czestochowa


I want to have a stronger devotion to Our Lady of Czestochowa, and I was going to go to Poland this past summer for World Youth Day, but as life always seems to surprise you, Brazil made it's way into the picture instead. The Black Madonna is also another term for this apparation. Although I didn't get to go there, I still would like to read more about it, as well as the affects on Poland.

I think that covers my most favorite apparations of Mary. Of course, there are more that I did not mention that are also recognized. I hope to gaina stronger devotion to Mary espcecially during this beautiful month of October!
